The Best 3 Bean Vegan Chilli

This is my own recipe which I have made so many times that everything has become approximate and is now my omnivore family's favorite chilli. When I bought the ingredients this evening it only cost $10, including a bag of corn chips (excluding spices). It is so colorful I really should have taken a picure for you all to see. Enjoy!
Ingredients:
3 T olive oil
2 T cumin
3 T chilli powder
1 clove garlic
1 T cayenne (more to taste)
1 or 2 carrots chopped
1 large yellow (or white) onion chopped
2 bell peppers (I use 1 green and 1 red) chopped
2 good sized handfuls of frozen corn (1/2 c about)
1 large can diced tomatos
1 regular sized can mexican tomatos (or just more diced tomatoes)
1 small can of tomato paste (or sauce) (can omit it just adds a little thickness)
1 can dark red kidney beans
1 can chickpeas
1 can black beans (well rinsed)

Start by taking a large chilli pot and putting it on medium heat. Place oil, spices, and finely minced garlic  into pot until the spices have darkened slightly. Add carrots and onion cook for 2 mins, add bell pepper and cook additional 5 mins until onion starts to become translucent but not brown. Next add remaining ingredients making sure to rinse and drain all beans before you add them. Let simmer for 30mins. Serves 6 to 8.

They look good, but actually are not cooked all the way through. I've heard that the thing to do is make the pan as hot as possible before putting the batter in, which I did, but it still didn't cook as well as I would have liked. Anyone have any tips? Should I lower the heat? I know some of you make pancakes a lot. I'm a rank beginner.

This is the 3rd batch of brownies I made. The first two times I used the flax brownie recipe in "How It All Vegan" with results that produced a chewy, unsweet brick of a brownie that went directly to the trash both times. If anyone wants to know my theories on why, I'll be glad to do a recipe break down for you. Has anyone made this recipe with success?

The third time, I used a recipe from allrecipes.com with some adjustments. I prefer a cakey brownie, and I am quite pleased with the result.

Help me use carrots?

I have nearly 3 pounds of carrots, two of which are on the edge of spoiling (so I definitely want to cook those rather than doing anything with them raw). I live by myself. What on earth am I going to do with these things? I plan to make soup, which should knock out at least a pound of them, but I need some other carrot-intensive recipes. I'd love to do something sweet, and although I'm not opposed to carrot cake, I would especially like similar ideas that are *not* actually carrot cake. Savory ideas are welcome too, though, and bonus points for anything that freezes well!

"Cheeseburger" Macaroni

1 1/4 C. nutritional yeast
1/4 block firm, non-silken, tofu
1 1/2 C. Rice milk
1 tsp. Paprika
2 T Canola oil
2 tsp. garlic powder
2 tsp. soy sauce
2 tsp. mustard
1/2 block VeganRella, grated
1 lb box of pasta of your choice
1 package Boca crumbles, or equivalent

Preheat oven to 400F.
Put water on to boil the pasta.

While pasta water is getting ready/pasta is cooking, combine in a bowl the nutritional yeast, tofu, milk, paprika, oil, garlic, soy sauce, and mustard. Use a hand blender, or pour into a blender, and blend well.

Once pasta is cooked and drained, combine pasta, sauce mix, and crumbles. Mix in 1/2 the VeganRella.

Pour into baking dish, top with the rest of the VeganRella. Bake until heated through, and browned on top.

Sprouts

Hello.  It is now Lent and time to eat lots and lots of beans and veggies.  Anyways as I was reading in Nourishing Traditions she suggested sprouting beans as well as seeds.  So tonight I started both my Zesty Sprout Mix and some Red Kidney Beans.  I will probably eat the zesty mix in my salad or on a hummus and sprout sandwich.  I do have some questions about the sprouted red kidney beans.  In NT Sally Fallon, the author, says you should cook beans once they have been sprouted.  I know they will cook much faster than beans that have simply been soaked, but I don't have any recipes for sprouted red kidney beans.  Vegan is necessary.  Also, as I was googling for recipes I found a few sites that say you shouldn't eat sprouted red kidney beans.  I don't know if they mean only raw sprouted red kidney beans or both raw and cooked sprouted red kidney beans.  Any recipes or info/help appreciated.  :-)  I will post pictures of my lovely sprouted beans/seeds with the recipes once they have sprouted.  Thanks.

  1. First, today i tried nutritional yeast on popcorn and it tasted so good. I used oil to coat to make the yeast stick. However i thought it was missing something. So i sprinkled some Vegeta seasoning on it. It had the besst kick to it like cheesy /salty and unhealthy haha....yet i highly urge you to try it.



2. Secondly i loooove Avocados...yet i only use them as a spread/guacamole...any ideas for getting the most/ best taste out of them / recipes?
