Tofu Parfait and Noodle Salad with Peanut Sauce

Hello, first-time post, new to the community, hope this hasn't been posted a million times already, etc. .)

I just posted this in a comment, but I've been meaning to post the recipe to the community for a while. It is a Fruity Tofu Parfait with Granola. I got it from allrecipes.com
For some reason, the stylesheets on allrecipes.com are displaying kind of funny at the moment, but you should still be able to read it. But anyway, I'll paste it here too, just in case:

Ingredients
* 1 (12 ounce) package silken tofu
* 3 tablespoons honey
* 2 teaspoons vanilla extract
* 1 cup raspberries
* 1 apple, cored and diced
* 1/2 cup low fat granola
* 2 tablespoons raisins

Directions
1. Combine tofu, honey and vanilla in blender or food processor and puree until completely smooth, then transfer to a bowl and stir in raspberries until mixture is slightly pink.
2. Layer fruity tofu in serving glasses with apple and granola, top with raisins and serve.

It's pretty similar to a yogurt-based parfait, though it doesn't taste totally the same, but if you are used to the taste of tofu, then you might like this. I have played around with this recipe a lot, you can use all kinds of berries, apples, or bananas. I also usually blend a banana in with the tofu, it gives a thicker consistency and more of a natural sweetener. Oh and you can replace honey with brown sugar to make it totally vegan.

Hmm now that I am writing this post, I feel like posting another dish that I just posted to my own journal the other day. It's sort of a vague recipe, because I just threw it together based on what I had in the kitchen, so it can be modified a lot. And I don't really have measurements, I kind of just went by taste. But anyway, I found this really tasty:
