Thai Cococut Curry w/Tofu

I made this a few nights ago and I'm still enjoying it as leftovers. This isn't a quick recipe and is definitely for people who don't mind spending some time on prep. Everything should be prepared before you turn the stove on, as cooking time is short and you don't want your veggies to get too soft while you're fiddling with a can or chopping.

Serve over quinoa, brown or jasmine rice. This will feed 4 people happily or give you awesome leftovers for a few days. It's also easy to cut the recipe down.

Looking for a light, fresh tomato sauce

Hello. Could someone recommend a recipe for a simple, light tomato sauce? I am craving pasta tonight but would love to not use a jar sauce. I have spices and olive oil and fresh tomatoes, mushrooms, onion, and garlic. I also have a can of crushed tomato and a can of tomato paste, but would love to just use fresh ingredients tonight. Any suggestions? Thanks.


Veggies in a Box

Do any of you belong to one of those deals where they send locally grown produce to you once a week or so?   My husband and I have really been contemplating this lately and I wanted to see if anyone else has done it and had anything to say about it. 

I live in New Jersey if that helps with potential recommendations.
