Fried "Chicken" help

Hi all,

I tried to search the memories, and if I missed it, please let me know. I got my husband all excited about a vegan southern meal (fried "chicken", mashed potatoes, gravy, biscuits and peas to make us feel less guilty, haha), but now I'm at work and don't have my cookbook (I was using "Hot Damn and Hell Yeah!") and I want to stop to get ingredients on my way home. Does anyone either a.) have this cookbook to help me out with fake fried "chicken" (preferably with tofu, but I will do seitan/tempeh) or do you have a great tried and true recipe that isn't too difficult?

Also, I saw in the memories a great fake chicken nugget recipe that calls for vegan mayo. Now, I HATE actual mayonnaise--is vegan mayo so similar that it would be detestable as well? Maybe it would just be less gross by not being made with eggs. Any advice would be appreciated!

I've been on a huge muffin-making kick lately, due to it now being summer and the influx of fruits I can buy (as well as time I have on my hands!!) I've been particularly interested in making low-fat muffins so as to have a delicious, fresh, healthy snack. I know, right?

Anyway, here are two recipes that I've been fiddling with and trust me, not only will your friends not know they're vegan, they won't know how low in fat they are!!
