Non-Chocolate Cake & Zatar/Za'tar

I'm looking for a delectable cake recipe that non-vegans can appreciate. It's for a colleague's birthday. This colleague doesn't like chocolate. So, I'm looking for something that's a bit different but not plain, but not too out there either. (I work with finicky people.) Unfortunately, I'm a little broke at the moment, so I'm hoping to just use what I have on hand. Which excludes carrots and lemons, so no carrot or lemon cakes.

I have almonds, anise seed, oranges, peaches and apples. Cinnamon, vanilla, cloves, nutmeg, allspice, etc. And, thankfully, icing sugar.

Any ideas? Please?

Request Number Two

I'd like to make my own zatar (za'tar) spice/herb mix. I know what basically goes into it, but I'd like to know in what quantities. And how hard is it to come across sumac?

Fennel

I bought a whole bunch of fennel for cheap!
only problem is, what the heck do I do with it?

I've only ever put it in curries, and not much at that (my SO isn't too fond of the taste, but will have it in little bits)

Can I freeze it? How should I best do this?
It would be good to have some around because, as I said, I can't use too much at a time, so never get to use a whole... bulb before it goes weird.

Any recipes that use some fennel? or something that will mask the taste a bit?

Although I have a lot, I need to have it in small 'doses'.
