Vegan chocolate mousse pie

I made this the other night. I was ridiculously happy with how it turned out. it's really good with a nice, big glass of soy milk.

1 ready made pie crust (you can use either chocolate or graham cracker, but I used chocolate)
2 cartons of Mori-Nu silken firm tofu
1 bag of Tropical Source Chocolate Chips
2 T maple syrup
2 t vanilla extract
1 t cinnamon
3 t instant coffee

melt the chocolate chips (you can either use a double boiler or you can do it in the microwave. if you use the microwave, be really careful. stop it often and stir. there's nothing worse than burnt chocolate)
then blend all ingredients (except for pie crust) in a food processor until silky smooth.
fill pie crust.
place in fridge for 2 hours to chill.
eat. smile.

it's just as good without the pie crust. if you want to be fancy, you could just use nice glasses. martini or champagne glasses would would work nicely.
