Quick Christmas Recipes?

Can you recommend some recipes for Christmas?

I'm supposed to go to my SO's family gathering for a few hours in the morning, then get a lift from her mum (hopefully) down to my mums for my family thing (approx 1hr by car or 3-4hrs by train if I can't get a lift).

I either need to be able to make it when I arrive (therefore a very quick recipe) or have it ready, but be able to travel in a train and a car with it.

The only thing vegan will be the 'salad', which consists of tomato, cucumber and lettuce (mum's a whizbang chef). Everything else is is meaty, creamy or cheesy.

Macadamia nut sour cream.

I just stumbled upon this over at http://recipes.sparkpeople.com/ and wanted to share it, I haven't tried any of the cashew ones, has anyone had any success with them? I personally think the flavor of macadamia nuts would work better.

1 c macadamia nuts
1/2 c water
1 t olive oil
1 t golden flax seed, ground
2 cloves garlic
1 T lemon juice


Blend all ingredients in blender until smooth.
Garnish with cilantro or chives.
Tip for using Flax Seed: If you grind 1/4 cup of whole Flaxseed it will equal approximately 1/2 cup of ground Flax.
Makes approx half a cup.

I haven't tried it yet, I'm planning to give it a go tonight.

EDIT: I made this as a sauce for a stir fry, it was slightly grainy in texture, similar to hummus. My old blender has seen better days. I used firm tofu rather than the extra firm i normally use, it broke up during cooking, and I added whole grain mustard, and these along with the cooking time helped with the texture. Next time I'll soak the nuts first.

bananas as egg substitute for baking

hey, i've been trying to bake with bananas instead of eggs. any tips to make this go more smoothly? like exact proportions to work with? i ended up with a very rubbery, starchy cookie (it's flourless so it was a bit weird how incredibly starchy it was).
specifically, i'm trying to veganize peanut butter cookies:
1 cup peanut butter
1 cup sugar (i just use unrefined)
1 egg (banana?)
chocolate chips (optional)

T-day menu

I'm trying to get my T-day menu in order.
I'm thinking about the roasted butternut squash soup, sweet potato fries, and the pumpkin seed crusted tofu (to replace the tofurky this year) from Vegan with a Vengance. I also will have mashed potatoes and green beans with almonds, but can anyone suggest anymore side dishes that will please even omnis?
Specifically I'm struggiling with a stuffing/dressing recipe. My mom is on a candida cleanse so she can't have wheat, oats, or mushrooms- so I was thinking a wild rice stuffing recipe?

Green Bean Casserole, Pumpkin cheesecake, & Tofurky help!

Ok, so I browsed the tags, the memories, & searched the community, & I did not find what I was looking for.

So, can someone recommend a Green Bean Casserole recipe to me that they have tried? I don't care how bad it is for you. [I would actually prefer it to have canned green beans...] I just want it to be as close to traditional casserole as possible. If I make the dish, I am under a lot of pressure, because my mom agreed to let me do it, as long as it didn't taste gross. [She's convinced anything vegan is gross.]Plus she's not going to make two batches, like the stuffing, it would just be mine. & it is going to possibly be feeding two 80 year olds. So I don't want them to think it's gross either. Oh, & it should be able to feed about 6-8 people with left overs, please!

My next question is about tofurky. I need some suggestions on how to cook it. This will only be feeding my sister, boyfriend, & I. So vegans will be used to the taste of 'fake' meat. My friend told me he cooks his with some veggies in the bottom of a pan, drizzled in olive oil. Then he drizzles his tofurky with olive oil & puts herbs on top. Then he covers it with foil, & cooks it. But I'm afraid it will turn out dry if I don't baste it or add anything else to it. Should I coat it in a rub? How about the orange juice & soy sauce glaze on the back of the box? Would it be best to use that?

My last question would be, has anyone tried this recipe for pumpkin cheesecake? I first found it in a vegetarian starter kit recipe booklet from a different site, & then I saw vegcooking has the same recipe on their site. If anyone has tried this, is it close to regular cheesecake? If not, can anyone recommend a good pumpkin cheesecake? I saw one in the tags, but it called for three tubs of tofutti cream cheese, & I can't really afford three tubs of it. :(

attack of the sour cream

so i bought fake sour cream the other day to make this amazing sweedish meatball gravy with it, which i did and served over eggless egg noodles with fake meatballs.
only thing is, i only used like a table spoon of sour cream and now i have a whole tub of it left.

does anyone have any ideas on what else i could do with fake sour cream?
