Quick Eats

Hello veg*ns.

I need some help on quick healthy meals. I've been working loads of hours lately and I don't really have tons of time to cook. I've been doing fairly well when it comes to lunch/dinner thanks to these:

they're FANTASTIC! I highly recommend them. Buuuuuuut what can I do for breakfast? cereal/rice milk just doesn't cut it for me. I'm really wanting to make the switch to vegan full time come the new year so i also don't want to eat loads of eggs/fake meat stuff.

What are easy quick breakfast options? What do you vegans who are strapped for time eat on a daily basis? Is there something I can do ahead of time to save a few steps when cooking in a hurry? I love tofu but pressing it takes forever. I'm sure there's an easier way to eat on a busy schedule.

Pink Beans Suggestions

I just soaked a pound of pink beans. What can I make that is tasty and delicious using all these?

For the record, I'll probably make a small thing of rice and beans tonight, for lunch tomorrow, but a pound of beans, is a lot of beans.

So, what is your favorite (quick and easy, preferably) recipe that would be delicious with pink beans?

Also, what is the best way to store soaked and cooked beans? and how long do they last? I like dried beans better, but I really miss the ease of being able to just go and open up a can of them whenever I needed them.


Yogurt Subtitute for Cupcakes

So apparently I was really irresponsible when planning to make carrot cake cupcakes for my mom's birthday tomorrow from VCTotW, as I've just now noticed we don't have any soy yogurt.  I'm too far away from the store to be able to get there before tomorrow without wasting a ton of gas..  What would work as a substitute?  I'm even willing to downgrade these cupcakes to vegetarian since my mom is an omnivore anyway...  I just want them to turn out.  And they must be carrot cake cupcakes because those are her favorite I've made from the book.  *Tears*
