Christmas dinner for one?

So I know everyone has been posting about what to cook for Christmas, but my problem is slightly different: I need recipes/ideas of what to cook for only one person. I really don't want to slave in the kitchen cooking a feast when I will more than likely be the only one (out of 15) eating it, but I don't want to just pop an Amy's pot pie in the oven either. I'm not really looking for omni-friendly ideas, as my mother provides so much food that anything else added to the menu would just be too much. All I need are recipes that yield a small serving with little to no leftovers. Can anyone help?

Recipe Book +Recipe for mostly omni family gathering?

Hi all.

I still need a couple of gifts from a family member to me and she always gives me the money to buy what I want.

I was thinking of getting a couple of recipe books (I already have Passionate Vegetarian, How it all Vegan, Vegan with a Vengeance, Vegan Planet, Vegan Cooking for One, Simply Vegan, The Vegan Kithchen, Vegan Fusion World Cuisine). One of which I really want to buy is Fresh From the Vegetarian Slow Cooker.

If you could get any recipe book for Christmas, which one would you get?

And another question: in that recipe book (or the ones I've listed that I already have), what recipe would you make to bring to a Christmas family gathering (20+ omni's)? I want something easy to make that I can eat (because there's pretty much never anything there I can eat except crackers) and something they will like and be amazed that it's vegan. I was thinking of making a Vegan Sour Cream and Chicken Enchiladas recipe I have, but not sure how it'd taste to an omni, and I've never had them myself but they look amazing.

But, basically, I'd like some of your ideas on recipe books and what you make often at an omni gathering?

PS - I don't really want it to be dessert. And it doesn't have to be Christmas-y either.
