Puff pastry and other stuff.

I'm getting a new fridge (Yay! Everybody celebrate) because my current one is dying, and I now need to eat my freezer (and some fridge) goods because otherwise they'll defrost and go icky.

I have two packets of puff pastry, how can I use them quickly?

I also have:
1 pkt frozen spinach
2 zucchini
carrots
parsnips
fresh chilli
tofu
green and red capsicum
mushrooms

Pesto and cupcakes

I got a jar of Anne's vegan pesto for Christmas, and finally cracked into it this week. This isn't something I'd normally buy but it was a gift and free food is free food. :D It was really yummy, it was very bam in your face basil. I did think it needed a bit more of a cheesy taste, so I added some vegan parm.
Suffice it to say, the jar is now empty... Hehe. It made some darn good pasta, though!Cut for huge picsCollapse )




Also, this week I made jelly filled cupcakes from Veganomicon. Unfortunately I put to much jelly on them and they're not really filled with jelly... (In the recipe, you top the cupcakes with a teaspoon of jelly and as the cupcake bakes, it consumes the jelly and creates a jelly filled cupcake. Mine just sort of had large gapping jelly filled holes in them... xD)Cut again for huge pics and recipeCollapse )
