Tofu Scramble with Carmelized Onions, Red Bell Peppers, Mushrooms, and Spinach

I have finally mastered the tofu scramble I feared for so long. I've never really followed recipes for tofu scrambles, and I know that parts of this are similar to recipes I've seen, but I've never come across a recipe quite the same, so do let me know if I've unintentionally stolen someone else's recipe!

Also, mostly for my own reference, I've started a journal chronicling the food my roommate and I make. It is all vegan, and I've got to say, pretty damn delicious. Some recipes are straight out of cookbooks, and some are entirely our own. If they're from cookbooks, it says. In case anyone's curious: 73439thavenue.

My husband is going to the store today and I'd like him to pick up some hummus for me. Trouble is, I've never had it before and don't know which brands are any good. Which do you like?

i was inspired by the earlier hummus post...

and decided to try and make some of my own.

i'll be honest, i love hummus but even when you go to restaurants it's not always good. those little differences in proportion or one ingredient change can ruin a hummus for me.

i used a can of chick peas but the only kind they had was the progresso brand and that can is a little bigger like 19oz instead of 15oz. also, i reserved half of the liquid.
3 Tbs tahini
juice of 1 lemon
3 cloves garlic
1/3 C olive oil
pinch of salt
pinch of pepper

chopped the garlic and heated with olive oil in a pan, pureed chick peas with reserved liquid in blender, added lemon juice salt pepper tahini then pureed again, added garlic and only about a Tbs or 2 of the oil then blend again

i served it with some of the garlicky oil drizzled over it.

it was good. i think with a little adjustment (maybe a little less tahini& reserved liquid and a little more oil) it will be awesome.

thanks for all the advice you gave to the earlier post. you guys gave me the confidence to try making my own hummus.
