Tea Sandwiches- Bridal Shower Fanciness

Hi There,

I am planning a Bridal Shower for my sister and many of the guests (including myself) will need some vegan options. I have already spoken to the chef and all is well as long as I provide recipes of what I am looking for.

The theme is "High Tea" and its being held at this fancy Historical Victorian place.

I am looking for recipes for vegan tea sandwiches.

Any suggestions of your faves would be great. I have been scouring cookbooks but many just arent that finger sandwich type that would fit in with the theme.

Any suggestions are very much appreciated :)

Quinoa substitution?

Hey guys. I was going to make the pineapple cashew quinoa stirfry for dinner (from Vcon)but I could not find quinoa out here in the styx, so I'm wondering if you all think there is any way I could use cous cous instead?

review on homemade nut cheese

Cashew Cheddar Cheese

: This cheese is great for shredding or melting. Cashews work better than other nuts because they blend into such a creamy, rich consistency. If you're not satisfied with the cheese's final consistency or texture, blame the agar flakes; all store-bought brands of agar flakes are cut differently, which unfortunately affect's the amount added if measured by volume. If you'd rather not; learn the hard way as I did, go by the provided weight; rather than cup measure.

1 1/4 cups raw cashews
1/2 cup nutrirional yeast
2 teaspoons onion powder
2 teaspoons sea salt
1 teaspoon garlic powder
1/8 teaspoon ground white pepper
3 1/2 cups unsweetened plain soymilk
I cup agar flakes (about 2 ounces)
1/2 cup canola oil (heidi note: I don't like canola - used a mild tasting olive oil)
1/4 cup yellow miso
2 tablespoons freshly squeezed lemon juice (about I lemon)

Using the pulse button, finely grind the cashews in a food processor; don't allow the cashews to turn into a paste. Add the nutritional yeast, onion powder, salt, garlic powder, and white pepper. Pulse three more times to blend in the spices.

Combine the soymilk, agar, and oil in a heavy saucepan. Bring to a simmer over high heat. Decrease the heat to medium-low, cover, and simmer, stirring occasionally, for 10 minutes, or until the agar is dissolved. With the food processor running, gradually pour the soymilk mixture through the feed tube and into the cashew mixture. Blend for 2 minutes, or until very smooth and creamy, and then blend in the miso and lemon juice.

For grated or sliced cheese, transfer the cheese to a container, cover, and refrigerate about 4 hours, until very firm. Once it's firm, grate or slice the cheese as desired.

For melted cheese, use the cheese immediately as melted cheese. Alternatively, make the cheese in advance, cover, and refrigerate. When you're ready to use the cheese, melt it in a saucepan over medium heat until smooth and creamy, stirring frequently. If needed, add more soymilk for a thinner consistency.

For Jalapeno Cashew Cheddar Cheese: Stir 2 tablespoons of minced jalapeno chiles into 2 cups of melted cheese. The cheese will keep for 4 days, covered and refrigerated

Make 4 cups.
I didn't make the dish but I did make the cashew cheddar cheese for an eggplant parm dish and omgyum.  The agar is quite pricey though (where I got it, it was $69 per lb) so I cut the recipe in half and it still made a huge amount. 

seriously hands down, one of the best vegan cheeses out there.  It didn't have the same texture but it did taste like cheese a bit but not in a gross filmy way. But in a good, compliments with a lot of different tastes, kind of way.  This recipe is for someone who is up for a culinary adventure and looking for an alternative to all that heavily processed vegan cheeses on the market.

Gaining weight?

I'm not a full-fledged vegan, but I'm rather close to it.

I have a predicament. I'm a New York City kid, and spend most of my day running to trains and buses. My job is somewhat physical, as I work in a veterinary hospital and run up and down stairs every five seconds, and 'rassle kitties on the daily. I am chronically skinny and need to gain weight. Badly.

What can I eat or drink that will make me keep a few pounds on?

Urgent help wanted with baked beans!

Saturday I made "Brilliant Baked Beans" from How it all Vegan, and I figured I just stick to the recipe for once, cause I don't know how to make any form of baked beans to begin with. I already thought I had to put in way too much soy sauce, and I was right: I now have a whole oven dish full of beans in a really really salty and dark sauce (too much tomato paste for my taste too). Now what do I do with it?
Unfortunately, because I didn't put a decent subject line on it, this post has been in moderation-queue, so now the bean dish is two dish old as well, but I hope still saveable.
These were the ingredients:
2 c cooked beans
1 1/2 c stock
1 tsp molasses
6-oz can tomato paste
1 small onion
2 cloves of garlic
4 tbsp Braggs/soy sauce
1tbsp mustard
1 tsp cumin
1/2 tsp paprika

Has anyone else made it? What was your experience? How to fix?

Baked potato toppings!

Just a quick tip.
I made a baked potato tonight, and I had a little bit of Fantastic World Foods Taco Filling left over from last night, not enough for another meal, but the perfect amount to use as a topping for the potato! I sprinkled it on just like bacon bits and it was fantastic! Granted, I haven't had bacon bits in years, but it tastes pretty similar to what I remember they taste like, and they, along with some Earth Balance, made the potato yuuuuum and omni friendly. :]

VWAV Pancakes

I'm currently studying abroad and was unable to bring all of my cookbooks with me. I settled on bringing only Veganomicon because it's pretty comprehensive. BUT, apparently it doesn't have a normal pancake recipe. I remember the one in VWAV being absolutely amazing. My friend is making a group of us brunch this weekend and has agreed to make vegan pancakes, but I don't have the recipe. The ones I've found online look iffy and require too many ingredients. Could anyone give me the VWAV one?

PS The all dessert dinner turned out interesting. Our chocolate fondue was amazing, the peanut butter cookie pizza was pretty healthy-tasting but still good, and the cake was good but completely different than anything I'd ever had before. I felt so gross afterwards, but I highly recommend all of you making a three course vegan dessert dinner with some vegan friends. Yum!

Agave Nectar

I just got back from Trader Joe's and they have an 11.75 oz bottle of organic blue agave nectar for right around $3.  I've never ever seen it that cheap before.  The last time I was there, I didn't see it so it must be newish.  Just wanted to let you know since it's normally very $$$.
