Tomatillo Salsa recipe

 I made this for St. Patrick's Day, and it was a really big hit at my bbq. Just thought I'd share:

1 1/2 lb tomatillos
1/2 cup chopped white onion
1/2 cup cilantro leaves
1 Tbsp fresh lime juice
1/4 teaspoon sugar
2 Jalapeño peppers, stemmed, seeded and chopped
Salt to taste

1 Remove papery husks from tomatillos and rinse well. Cut in half and place cut side down on a foil-lined baking sheet. Place under a broiler for about 5-7 minutes to lightly blacken the skin.

2 Place tomatillos, lime juice, onions, cilantro, Jalapeño peppers, sugar in a food processor (or blender) and pulse until all ingredients are finely chopped and mixed. Season to taste with salt. Cool in refrigerator.

Serve with chips or as a salsa accompaniment to Mexican dishes.

Makes 3 cups.

Portable Coffee Creamer

I looked through the memories and didn't see anything like this. Everyone recommends Silk for coffee creamer but i'm not a very big fan. Does anyone else make coffee creamer? And not just that, but i'm also looking for a portable coffee creamer. Something I can take on the go like those little tubs of non dairy creamer you see or the packets of powdered creamer? But vegan, of course.

Please let me know! I know I can't be the only one in dire need of their on-the-go coffee fix!
