Bread at Maccaroni Grill

I want to make a bread that is like the one Maccaroni Grill serves. I googled and searched every cooking community I can think of, but can't seem to find anything that I think would be similar.
Does anyone have a recipe for a yummy herbed bread that is crusty on the outside, and soft and fluffy on the inside?

Switching flour?

In terms of cupcakes... if a recipe asks for all purpose flour... is it's terribly wrong to use another type?

I have whole wheat flour, pastry flour, and soy flour available. I was thinking of maybe blending the whole wheat with the pastry? I'm trying to make the jelly donut cupcakes from Veganomicon by the way (in case any of you have ever made this.)
