Too much Baby bok-choy!

I like baby bok-choy, but I don't love it. If definitely a plus floating in pho, and my father used to make it all the time, but I have little to no experience.
Never the less I was at my farmers market yesterday and it was so green, the sun was shining, it was the last bunch...

I know have a bunch of baby bok-choy.

Ok, so we just went from too-cool-to-sit-in-the-shade-without-a-sweater to the high 80's-low 90's overnight. This is my first spring/summer as a vegan.

It's still too early in my area for high summer veggies, no eggplant, tomatoes, greenbeans, squash, peppers, or cucumbers/melons yet. We've got asparagus, snap and snow peas and assorted greens, onions, garlic, avocado, mushrooms and potatoes. I don't buy imported out of season produce ... I live in California and have that luxury.
