Green soup.

I just made up the best soup I have ever had in my life. I'm calling it green soup.

3/4 of a 900ml box of vegetable broth
1 1/2 diced zucchinis - the full one is peeled
just under 1/2 head of broccoli, diced
2 avocados
two big handfuls of shredded cabbage
one BIG leak, chopped into circles.
some pepper, by taste.

Bring the broth to a boil, then add broccoli, zucchini and avocado. Let cook until very soft, then completely mash them. Add some pepper. Let cook for another few minutes to ensure that it is all liquified (it should be mushy and have texture, but still fairly smooth). Add cabbage and leeks, cook until soft. Serve with shredded carrot as garnish.

Lentils as a meat substitute?

Alright... I've been through the memories and I didn't find any recipes that fit the resources I have to work with.
I wanted to make some sort of meat-like patties or loaf with lentils,
but all the recipes I find call for rice!

I don't have rice... but I have steel cut oats!
I've heard you could use oats in recipes like this...
Any ideas?

tasty easy lentil soup

so i'm a believer that an empty wallet and a relatively empty cupboard make for the mother of all invention as far as cooking goes.

that being said, this is what my hungry belly created tonight:

empty cupboard lentil soup

1 can of organic lentils, drained but not rinsed
1 small sweet yellow onion, roughly chopped
3 cloves of garlic, minced
1 small zucchini
2 vegetable bullion cubes
2 cups of water
1 bay leaf
a dash of turmeric, parsley, and old bay seasoning
salt and pepper to taste

saute onions and garlic until done. add zucchini, cook a minute more. then add lentils, stir together. add bullion cubes, crumbled, and stir. then add water and seasonings. bring to a boil for a couple minutes and then stir and serve. easiest thing EVER! makes a small amount, only enough for about two hearty servings.
