Zucchini Bread?

It appears that I am going to have a bumper crop of zucchini... and the only thing I ever do with it is... toss it into a stirfry.

Does anyone have any super-fabulous-i swear- by-it recipes for zucchini bread...(bonus points if it is gluten free)..
or any other awesome ideas for my big ol' ever growing zucchini pile?

 

Seitan Bratwurst



Adapted from this recipe.
  • 1 1/4 c. vital wheat gluten
  • 1/4 c. nutritional yeast
  • 1/2 tsp. each Old Bay seasoning, ground sage, and dried marjoram
  • 1 c. cold vegetable broth
  • 1/2 c. silken tofu
  • 1 tbsp. olive oil (I think I will try leaving this out next time)
  • 1 tbsp. soy sauce
Mix together dry ingredients in a large bowl. Mash up tofu and mix with the rest of the wet ingredients, then add to the dry ingredients. Divide into 5 portions; wrap each tightly in aluminum foil and steam for 40 minutes.

Fried Rice and Peanut Sauce

Sadly I've discovered that the key ingredient to get the "restaurant" fried rice is generally fish sauce. :(  This is about as close as I can get to the taste I desire:
(if you've seen my recipes before you know I suck at measurements)


I also made some stirfry (big ol' bag of frozen veggies) and peanut sauce.  I saw a few peanut sauce recipes...but here's another

Mix and add to stir fry...also tastes great on salads.
