Refried Beans

I grew up in an area with virtually no Mexican influence, so there may be basic tips and tricks about Mexican cooking that I am missing, but I can't seem to put together refried beans that don't come out bland and dry. I'd love to try out some different recipes for this creamy and satisfying staple. What's worked for you?

cupcake emergency

Anyone have the Vegan Cupcakes Take Over the World cinnamon icing recipe that goes with the pumpkin chocolate chip cupcakes? I want to make my friend cupcakes for his birthday tonight, but can't find the recipe anywhere! Any help would be greatly appreciated =)

Illegal salad

Its called that because it tastes SO good it should be illegal. (or at least that was my first thought on taste-testing it!)


1/2 cup each of: chick peas (canned or cooked and cooled), red kidney beans, white beans
1-2 avocados diced
1 large very ripe tomato, diced
2-3 button mushrooms, diced
1/3 red onion diced very finely
1/3 cup (8-10) kalamata olives (seeds removed)
1 large clove garlic, finely diced
1 handful of pepitas, raw
pepper, black, freshly milled is best
olive oil, extra virgin
vinegar: I used rice vinegar, the type you would use to make sushi rice with

Combine all ingredients in a bowl and gently combine, add the pepper, vinegar and olive oil to your own taste.

I would love to post you a pic but my camera gives crap photos, so i won't inflict that on you, plus it tastes vastly superior to how it looks.

I served mine with a side of roasted potato, sweet potato and pumpkin. O..... M..... G....
