"chicken" nuggets (delight/may-wah)

i'm 99% sure these are the same thing. (they look, smell and taste exactly the same... i.e. DELICIOUS!!!!) so if any of you were wondering what these mythical nuggets taste like, there you go. (i found the delight nuggets at wholefoods for about 7 bucks for 10.5 oz/300g.) if you have an asian market near you that offers the ones from may-wah, go for that since they're quite a bit cheaper.

the really weird thing about delight is that they are claiming on their website that they grow the soybeans in north carolina, but on the package, it clearly states that it's a product of taiwan. so if they were the same price, i'd go for may-wah if only for the truthfulness. vs.

Vegan Cream Cheese Frosting

For the past couple hours I've been attempting to make delicious pumpkin cupcakes with cream cheese frosting. I've figured out the cupcake part (woo!), but I've made cream cheese soup rather than frosting (boo!). How can I thicken this up? I suppose I can use it as a drizzle if I have to, but I was really looking forward to frosting. Help?

If this helps...I used this recipe:
2 cup tofutti cream cheese
.5 c soy milk
4 TB Earth Balance
1.5 c powdered sugar

Vegan Quesadilla

I know it's a relatively self-explanatory thing to make but that won't stop me from sharing. :)
- 2 tortillas
- Follow Your Heart moz-style cheese
- 3-6 green onions, sliced
- 5-8 black olives, sliced
- refried beans
- sour supreme cream
- hot sauce, if you are so inclined

Layer one side of one tortilla with cheese, fry in oiled pan on medium heat until slightly brown. Place browned tortilla with cheese in broiler or oven on broil (on high). Broil until cheese* is melted.

Spread refried beans on other tortilla slice, top with olives and onions and cook in oiled pan on medium heat until slightly brown. Add other tortilla and cook for short period of time (20-30 more seconds).

Top with sour supreme and hot sauce. Eat. Enjoy. Repeat.

*You may not need to do this with other vegan cheeses. But for Follow Your Heart's cheese, the easiest way to melt is to broil.
