Incidentally vegan banana bread

I developed this recipe recently and wanted to share it. What I love about this banana bread is that it just so happens to be vegan, as opposed to attempting vegan substitutes for eggs and dairy. In Home Baking, there is a recipe for (non-vegan) banana bread which does not use any eggs. The author prefers it that way; the result is a bit more bread-like rather than cakey. I've long thought about making an olive oil banana bread (though I'm SURE I'm not the first to think of this). So, I played around with the base recipe and came out with something awesome.

INCIDENTALLY VEGAN OLIVE OIL BANANA BREAD

Ingredients:

-About 3 large, overripe bananas
-2 cups unbleached all-purpose flour, or whole wheat flour, or a combination thereof
-3/4 tsp. baking soda
-1/2 tsp. nutmeg or cinnamon
-Pinch of salt
-1/2 cup good quality extra-virgin olive oil. Please use the good, spicy kind -- Badia is my favorite for this
-1 cup granulated sugar (I used the unrefined kind)
-1/8 tsp distilled white vinegar or cider vinegar
-1&1/2 Tbsp. dark rum or 1/2 tsp rum extract or 1/2 tsp vanilla extract
-1 Tbsp. demerara (sugar in the raw) or dark brown sugar

Preheat the oven to 350 degrees. Grease a standard-size loaf pan.

Mash the bananas with a potato mashed until smooth, or puree them in a food processor. Measure out 1&1/2 cups of puree. Set aside.

In a medium bowl, whisk together the flour, baking soda, nutmeg, and salt. Set aside.

In a large bowl, beat together the oil and sugar until well-combined. Add the vinegar and rum, and beat to mix well. Add the banana puree and the flour mixture alternately, about 1 cup at a time, beginning with the banana and beating to just incorporate. Use a spatula to fold in any flour that has not been absorbed. Do not overmix.

Scrape the batter into the prepared pan. Smooth the top, and sprinkle evenly with the demerara sugar. Bake for 50-65 minutes, or until the top is nicely browned and a toothpick inserted in the center comes out clean. Let cool on a wire rack for about 20 minutes; then turn the loaf out of the pan and allow it to cool completely.

quinoa patties or balls: got a recipe for me?

Hi everyone, I am keen to try making some balls or patties to use on sandwhiches etc with cooked quinoa as one of the ingredients. I checked the tags and there's nothing there that I can see. Do any of you have any recipes or even just ideas I could put quinoa with. I'm thinking  they'd be mixed with something else like potato, pumpkin, sweet potato or something plus some spices or herbs then rolled and shallow fried, cooled then eaten homnomnom.

Raw Meals?

Tonight I made my first raw meal (the Live Lasagna from You Won't Believe It's Vegan!). While I really enjoyed it, overall I couldn't help feeling like it was more of.... a salad, for lack of a better word, with fancy sauce. So my question is, for someone interested in getting into raw food a little more, what would you recommend as favourite or really satisfying main meals? Keeping in mind that I don't have any fancy equipment like a dehydrator, only the kitchen basics and access to a fresh but not hugely varied selection of vegetables. Thankye!!
