Carrot Cake

Hi all.
I was wanting to make a carrot cake, but unfortunately all the recipes I have seen involve coconut or sultanas, which the person I'm making it for doesn't like/is allergic to, or something else like a cup of maple syrup, which is too expensive for this venture.

The carrot cupcake recipe from VCTOTW seems to be the closest to the kind of recipe that I'm after, but it doesn't have pineapple (which she likes) but it DOES have sultanas. What say you on somehow subbing out the sultanas and adding in some pineapple?

Soy Chorizo

Long time lurker, first time poster.  

I usually dont cook with Soy Chorizo, but I have some left over from making chorizo/black bean burgers. 

Any advice on a quick easy recipe?   Also, how long does it keep in the fridge?  Can i freeze it?  I only used 1/4 of the package for the burgers, and I dont want the rest to go to waste.   I also have left over red bell pepper and onion from the burgers.

Here is the recipe for the burgers I made the other night.  

In the food processor I threw in:
1/4 onion
2 cloves garlic
1/2 red bell pepper
I added beans into the processor till it seemed thick enough (it was my first time making these, and I was making this up as i went)

I then put this thick mush into a bowl, added some whole beans , chorizo, and almond meal.   At first it wasnt holding together well, so I added more almond meal.  Then it seemed too dry, so i added a little olive oil.  haha   

maybe like 1/4 tsp. cayenne and some cumin to taste  

I fried them in some olive oil.     

I will make them again tonight and post a pic!!
