Looking for suggestions - Gimme Lean Sausage

I'm looking for suggestions.

I have a tube of Gimme Lean 'sausage' and I'd like to do something interesting with it. My kids said they wanted 'sausages' when we were grocery shopping so I grabbed it, but then they changed their minds and it never got used. I don't usually buy processed foods so don't have much experience making things with them. I'm looking for an interesting twist on using it. Or maybe an interesting way of dressing up 'sausages' or incorporating them into another dish?

Easy vegetable gravy recipe

It's the end of the month which means I'm using up all the food I have rather than grocery shopping, and on tonight's menu was a big plate of roasted vegetables to use up all those odds and ends in the fridge. My kids asked for gravy so I came up with this really simple and delicious vegetable gravy.

1 tablespoon Earth Balance (or other vegan butter)
1 & 1/2 tablespoons flour
1 cup vegetable stock (I used, and highly recommend, Better Than Bouillon brand)

Melt butter over medium heat. Add flour and whisk for 2-3 minutes until golden brown.
Add vegetable stock, slowly, while whisking to prevent lumps.
Bring to a boil and reduce heat, simmering for 7 minutes, whisking a few times.

Easy! I didn't add salt because I figured there was enough in the stock, but if you use homemade vegetable stock I'd add some salt, to taste.

I could imagine this going well with a Tofurkey roast or smothered on some mashed potatoes. Seriously yummy! I wanted to just drink it out of the pan. o_O

And yes, I know gravy is fairly basic so it's not likely this is actually a recipe no-one's ever come up with before, but I didn't see any recipes for vegetable gravy when I used the tags.
