Seattle area cooking class

Hello everyone.

I'm not what you would call a vegan, or a vegetarian or a real vegetable eater at all. The reason I'm posting is for my vegan sister.

She usually lives in Alabama for school but she's home (south of Seattle, WA) for the summer. Neither of us are cooks by any means. Also, living in Alabama she doesn't get much inspiration for her vegan diet. I wouldn’t mind participating myself to try and lessen my fear of this thing you call a vegetable.

I'd like to surprise her and help her find a cooking class around the Seattle area this summer but everywhere I looked online was basic "this is a vegetable" kind of classes.

Has anyone attended anything they loved or found inspirational? The cheaper the better. :)

Choux Pastry

Is anyone aware of a recipe for vegan choux pastry?
Is it possible?

Watching Masterchef Australia, I saw them make a beast of a Croquembouche, and I really want to try to veganise this monster. I'm pretty sure I could make a decent vegan custard, the caramel is already vegan, but my god the choux seems difficult to veganise.
Any advice?

Have any of you made vegan eclairs or profiteroles?
