What to do with a zephyr squash?

A friend from work recently gave us a HUGE zephyr squash from her garden. This thing is probably two feet long and who knows what in diameter. We've been cooking with oversized zucchini for a while (always the cheapest at the farmers market!) but zephyr squash is a whole different ballgame.

I've been googling/checking the tags for recipes that specifically use zephyr squash and haven't really found any. It has a somewhat tough skin, and the inside more reminds me of a butternut squash. I know it is a cross between two different varieties of squash, but I guess that fact that it's technically a summer squash is what's throwing me off.

Any recipes? tips? thanks!
