TONS of adzuki beans!

A friend of mine recently moved out and left us a TON of dried adzuki beans. I checked here and on vegweb but couldn't find something somewhat simple enough for my omni fiance to enjoy as well and something to use up all these things. We have about maybe 2-3 cups (maybe even more, I just eyeballed it) of dried beans and as everyone knows, when cooked, you end up with WAY more.

So does anyone have any ideas? Multiple ideas that don't use all of them would be great too, whatever to use these up! I've never eaten these before so I really don't know what to do. I'm a big fan of mexican food, could I use these in place of black beans maybe? We also like Indian food, Middle Eastern, African, plainer things, I don't really even know what kind of cuisine these go with really!

So, any advice would be wonderful!
