Two questions on frosting

First, I made some frosting with powdered sugar, the so delicious brand coconut milk and tofutti cream cheese.  It's really good and I wasn't able to use all of it, so is it safe to freeze, or will that not turn out well?

If I can't freeze it, what can I do with it?  I was hoping that you guys would have some brilliant ideas that I hadn't thought of.  I don't want to make any cookies (I made some beer cupcakes to help me with my PMS, and those cravings are done now), but I can't think of anything else to possibly do with frosting.  I could make something sweet and just take it into work, but I would like to do something different.  So what are your favorite "different" recipes that include cream cheese frosting?

Help me veganize a spaetzle-like recipe?

Help needed! My late grandmother was Lithuanian and she positively thrived off the recipe my family has come to call "halushkis" (ha-loosh-keys). Basically, it's a version of spaetzle and the recipe reads like this (my grandmother's words--written exactly as she wrote it):

2 eggs
1/2 cup milk
1 1/2 cup flour

2 tsp butter
1 tsp salt

Mix eggs and milk, combine with flour into a paste. Will be (word I'm assuming means "thick" since it's not written in English :). Wet spoon in boiling water, then cut off small pieces with wet spoon and drop into boiling salted water. As soon as pieces rice, is done. Drain well. Butter salt to taste.

Okay, in my ovo-veg days, I made this twice--once with soy milk and soy margarine, a second time with rice milk and soy margarine--both were money. Worked like a charm. But now that I'm on the vegan wagon, I don't know what will serve in place of the eggs. Ener-G is my only guess and I'm hesitant to even try it since I feel Ener-G tastes so...Ener-Gish, but if anyone's rocking out any other ideas, I'd LOVE to hear 'em.
