Pineapple & Asparagus Pasta Salad

This is a recipe I've veganised it's quick, easy and tasty :)

 
Ingredients

160g penna pasta
1/2 cup roasted cashews
1 bunch of asparagus
225g tin of pineapple pieces drained
2 shallots (green onions/scallions) chopped
1/2 red capsicum (pepper) diced

Dressing

2 tablespoons light soy sauce
1 teaspoon dark soy or regular soy sauce
1 teaspoon brown sugar
1 teaspoon grated ginger


Directions


1) Add pasta into boiling water and cook until tender
2) Mean while cook asparagus your preferred method (I use the microwave) until tender chop spears into thirds
3) In a small bowl mix dressing ingredients well ensuring sugar has dissolved
4) In a separate bowl combine drained pasta, pineapple, asparagus, cashews, shallots, capsicum & dressing. Toss well


Serve warm or cold


Note: As you can tell in the picture I used tin asparagus and peanuts, as I didnt have any on hand these substitutes work fine with the recipe. Feel free to tweak the recipe, I tend to add more ginger to the dressing :)

 

 

Potato milk?

I'm not sure how I've never, ever heard of this before, but just today heard a bit about potato milk. As in, a non-dairy milk sub made from potatoes. I'd really love to try it, and see how it works out in different recipes - the thing is, I've never seen anything like it in U.S. stores, and my google-fu must be failing me because I cannot find a recipe for the homemade stuff at all (I've read that you can make it at home, just can't seem find the directions how!).

Has anyone ever made some from scratch? Is it boiled potato blended with copious amounts of water and strained? Is potato starch involved? I'd really rather do a homemade version to try it rather than a mix.
