risotto substitution?

Hi, all.

So, it is fall down here, and I have a huuuuge mess of brown rice, which means it must be time for risottos!  However, all of my recipes call for adding Parmesan cheese towards the end, and they do taste kind of bland without it.  Do you guys have any suggestions for substitutions or even just some good general risotto recipes?  I'm just about buried in beetroot and acorn squash, so recipes aimed at those veges would be especially welcome.
