Brunch Ideas

The campaign that I work on is holding a staff brunch this Sunday. It's not going to be vegan, so I will need to take some stuff. A lot of the people there will be extremely-vegan friendly (they've been begging me to make food for weeks) so I want to make some awesome stuff. The problem is that I work from 9 am until 10 pm pretty Monday through Saturday. The brunch is at 11:30 on Sunday morning, so I will just have Sunday morning to take anything.

There's always coffee cakes, muffins, and the like, but I need something that will just pop out. They are having bagels and quiche and fruit, so is there something that might go along with that? That would also travel easily and be easy to throw together. I also have to do my laundry and any errands for the week that morning.


Harvest Stew with Kale, Scallions, Tomatoes, and White Beans (and a question about squash)

 I'm taking the University of Oregon's Urban Farm course this term (jealous?), and every few days I get to take home a giant bag of whatever veggies we harvest that day. Yesterday we harvested at least 10 lbs of dinosaur kale, and I took home a bunch of it. I was really craving the "Braised Seitan with Brussels, Kale, and Sun-Dried Tomatoes" recipe from V-Con, but the only ingredient I really had was the kale, and I really wanted to use some of the veggies from the Urban Farm. Here is the recipe that resulted. It was SO TASTY. The tarragon is what really makes it so don't leave that out!

Also, this week I brought home an adorable little squash that I am pretty sure is a delicata. I've never really cooked squash aside from zucchini and spaghetti squash, which seem way different to me. What should I do with it?
