Substitute for Shortening in Scones

Hello, all!

I just got my dry bowl all ready for some scones, using the recipe from Vegan Brunch, and just realized that I have no shortening! I was mostly interested in making these because I had all of the ingredients (oooops) and don't especially want to go to the store. Do any of you have experience subbing something else for shortening? I have a tiny bit of smartbalance, most of a jar of raw coconut oil, olive oil, vegetable oil.

I'm inclinded to go with the coconut oil.

Also, will my rice milk + vinegar concoction explode (ok, not explode, but do something horrible wrong) if I let it sit for a while longer?

EDITED TO ADD:
Not only did it work just fine, but I think using coconut oil instead of shortening is a notable improvement! At least if, like me, you like things tasting faintly of coconut. :-)
