I'd like to make the Orange Agave Cookies from Vegan Cookies Invade Your Cookie Jar this week. I make them all the time (with peppermint extract instead of orange zest) but I've recently moved back near my college and I can't find whole wheat pastry flour in any of the stores around here (Whole Foods included). I know the book has a section on substitutions at the beginning, but I left it at home. Does anyone happen to have the book and if so, could you see what she recommends subbing for whole wheat pastry flour? Or does anyone have an idea of what I could use and what the measurements would be? I think you usually need less whole wheat than regular flour so if I were to use regular pastry flour, what would the comparison be? Thanks in advance.
