pan de jamon and dulce de leche

Does anyone know of a good ham substitute? Prosciutto type smoked ham, not the sweet watery type. I'd love to find a way to make pan de jamon, which is ham, raisins, and olives rolled up in a rich dough and baked.

Here is a recipe for the original version, if anyone is curious. Just so you know, there is a photo of the bread that contains actual ham, and the recipe is in Spanish.

Smart bacon appears to be vegan, any other ideas?

Also, I discovered a recipe for dulce de leche that actually sounds like it would work. My family is from Argentina so I grew up eating it and I miss it a lot. I've seen recipes that involve flavoring a vegan custard and that seems really off.
This is the recipe that has me excited:

1 can (approx. 16 oz) coconut milk
1/2 cup brown sugar
1/2 cup white sugar
1/2 t. salt

Combine all ingredients in a medium to large saucepan. Be sure your pan has enough room, this mixture will increase a bit in volume a bit while it's cooking, and you don't want a hot messy spill. Over medium high heat, stir occasionally while bringing the mixture to a boil. Boil the mixture until it's a golden brown. Will keep in the refrigerator in a sealed container 2-3 weeks.

If anyone gives that a try, please let me know how it goes! I don't think I'll have time to try it for a while but it seems promising.
