Marzipan cookies.



Ingredients:

500 gr. Marzipan
225 gr. Icing/powdered sugar
1 Egg replacer
2 tbs. Orange Juice
Hazelnuts

Preparation:

1) Mix all ingredients.

2) Put the dough in cookie shapes onto a parchment paper on a baking tray. Press a hazelnut in the middle of each cookie.

3) Bake them for 10 minutes at 200°C.

These cookies are super simple and really yummy. I found them originally in a Danish magazine and veganized them. Definitely plan to veganize existing cookie recipes more often and be less scared of messing it up!
