Quick coleslaw with apples and almonds



Quick coleslaw with apples and almonds

3 cups shredded cabbage, preferably a mix of green and purple
1 cup sweet apple, cut small (I used Honeycrisp; Fuji or Braeburn would be good also)
1/2 cup toasted almonds (or pretty much any other nut), coarsely chopped
1/2 cup Veganaise
1-2 Tbsp. minced shallot or chives
1 Tbsp. flax oil (optional; you could also use ground flax to add nutrition, or skip entirely)
2-3 tsp. apple cider vinegar
1/2 tsp. salt or more to taste

Mix well, adjust seasonings, and serve well chilled. Makes 4-6 servings, depending on size.
