chickpea cutlets, gluten newbie

So, I made my first foray into using wheat gluten today, using the easiest recipe I could find: chickpea cutlets from the veganomicon. (http://yeahthatveganshit.blogspot.com/2008/02/veganomicons-chickpea-cutlets.html)

However, I managed to screw up this seemingly foolproof recipe by using 1 can of chickpeas rather than one cup, so probably twice the chickpeas. They are cooking right now, anyway.

So, gluten experts: How messed up will they be? How different from the original?
