NY-Style Rye Crackers

Hello my favorite cooking community!
Today I dug up a snack recipe I hadn't made in a long while. (Not since I've decided to go vegan.) But the great thing is: Both vegans and non-vegans love these crackers because they are healthy and still taste authentic (a bit like Wisecrackers but better I think, but correct me if I'm wrong.

* The honey was replaced by about the same amount of agave nectar, maybe a little less.

*I used whole spelt flour instead of rye and they turned out as nicely as usual.

* You might need more water than the 1/4 cup allotted, so make sure to have a little extra water handy when the dough doesn't come together right away.
