Jam Bars

I was planning to make "jam dots" with this recipe today, but didn't like how the dough held together when I tried to shape the cookies. I think I'm still an Earth Balance girl when it comes to cookie texture -- something I just can't shake from my pre-vegan baking days. But the pan version of this recipe turned out well, so I figured I'd share! ;-)

Jam Bars
(based loosely on the recipe for Famous Jam Dots in Fran Costigan's More Great Good Dairy-Free Desserts Naturally)

1 c rolled oats
1 c pecans
1 1/4 c whole wheat pastry flour
1/2 t baking powder
1/4 t cinnamon
1/4 t nutmeg
pinch salt
1/2 c canola oil
1/2 c maple syrup
1 t vanilla
1/2 t almond extract
1/3 cup all-fruit jam

Preheat oven to 350 degrees. Process toasted oats and nuts in blender until mixture resembles coarse meal. Pour into a bowl with dry ingredients. Stir in wet ingredients. Using your palm, shape dough into a sprayed 8x8 pan, reserving about 1/3 c of dough. Spread jam (any flavor; I used blackberry) evenly over the dough. Sprinkle reserved dough over the jam. Bake for about 18-22 minutes, and cool in pan before slicing. (Alternately, you could shape the dough into 1-inch balls and spoon jam into an indent. Bake for 15 minutes at 350.)
