Jam Banana Bread

I experimented with the banana bread recipe from How it all Vegan this afternoon by replacing the sugar with the last of my 2005 stash of peach jam. The results were really tasty, though I needed to lower the temp, reduce baking time, and cover the bread with foil to keep the top from caramelizing and burning. Thought I'd share the updated recipe:

Experimental Banana Jam Bread

3 ripe bananas, mashed
1 tbs lemon juice (or 1 tsp vanilla extract)
1/2 c oil
1/2 c peach jam (raspberry would probably be great, too)
1 1/2 c flour
1/2 wheat germ
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
(and I threw in 1/2 tsp pumpkin pie spice, because I like cinnamon with peaches)

Combine until "just mixed", pour into sprayed loaf pan, and bake in a pre-heated 350 degree oven for 35-40 minutes. (45 was too long and my top got a bit over-browned; a piece of foil on top of the pan would probably help.)
