Here's the recipe I used -- what would you recommend changing to make a fluffier (ie: slightly less chewy) waffle?
1 cup flour
1 tsp baking powder
1/6 cup vegan margarine, melted
1/2 banana (the original recipe called for 1 egg)
1 cup "milk" (I used unsweetened soy)
1/2 t vanilla extract
I preheated the waffle iron. Blended the banana, margarine, "milk" and vanilla in a blender. Mixed the flour and baking powder seperately, then added the wet stuff and mixed only until "just mixed." Then followed my waffle iron instructions.
It made 2 round waffles. (And the original recipe called for salt, but I left it out since my Earth Balance is salted.)
