Bean Soup

So My Grandmom has always made some awesome bean soup but it always involved taking the leftovers from a ham dinner and the ham hock. So I decided to make a varation on this, so that I could eat it. Also I wanted to make it more of a stew, ya know, nice and hardy. SO I started

2 cups of Bob's 13 Bean Soup Mix
1.5 quart vegetable stock
1 quart water
1/2 large onion sliced coursly
2 tbsp chilli powder
2 tbsp garlic powder
4 cups frozen mixed veggies
2 16oz cans of those baby potatos
1 package GimmieLean Soy sausage

- prepair the bean soup mix as directed on the package.

- bring vegetable stock and water to a boil; add beans, chilli powder, garlic powder, and pepper to taste.

-let simmer for 3-3.5 hours; stirring occasionally; keep covered

-slice sausage into patties and fry

-add sausage, onion, veggies and potatoes; let simmer for another hour or until all beans are soft and "eat-able".


It turned out soo good, and yeah even though the rocess is long, it makes a huge pot full which you can freeze in individual serving sizes. and its relavtively cheap for the amount you get. Which is good for poorcollege kids like me.
