Forget about him, I'm mint

A while ago I bought a ton of fresh mint, way more than I could use. So I froze it, and now I want to clear some space in my freezer. Does anyone know any good recipes (pasta sauces, soups, drinks, relishes?) that include mint in large quantities? Obviously they need to be recipes that will work okay with *frozen* mint.
