Avocado and Beans served with Blue Corn Tortilla Chips




Ingredients:
1 roma tomato, chopped
1 clove garlic, minced
1 serrano chile, minced
1/2 cup canned great northern beans, drained
1/2 medium ripe avocado, cubed
juice of 1/2 lime
salt and pepper to taste

Directions:
Place the tomato, garlic, and serrano in a bowl and mix to combine. Add a dash of salt and a few squeezes of lime juice. Let sit for 5 minutes. Meanwhile, drain the canned beans and add to the tomato mixture. Next add the avocado cubes, remaining lime juice, and salt and pepper to taste. Mix gently to combine. Serve with organic blue corn tortilla chips. 1-2 servings.
