easy recipe; cheese substitute?

i just moved into my first apartment, and was pretty excited to cook on my own. when i moved in, i realized i really dont know how to cook anything besides cakes and sweets.

so my first question is:
easy and cheap recipes? cheapvegan has helped me a lot, but i always like to try new things.

i found this recipe on when i was looking for a cobbler recipe for my mom. it calls for parmesan cheese, and im afraid the meal would be lacking flavor without it. any suggestions?

(it calls for a specific type of pasta (which isnt vegan), but i imagine any good pasta would do)

1 package (9 ounces) BUITONI Refrigerated Fettuccine
1/4 cup (1 ounce) BUITONI Refrigerated Freshly Shredded Parmesan Cheese
1 tablespoon olive oil
1 tablespoon red wine vinegar
1 pound fresh tomatoes, chopped
1/4 cup chopped fresh basil or 1 tablespoon dried basil, crushed

PREPARE pasta according to package directions.

TOSS pasta with cheese, oil and vinegar. Add tomatoes and basil. Season with salt and ground black pepper.
