This is something that has been made in my family for as long as I can remember. My mom would always make it for SuperBowl parties, birthday, get-togethers with the neighbors...or when we begged hard enough for it. So I tried out a vegan version and found it to be unbelievably awesome! Here's the recipe.
1.5 containers of vegan cream cheese
1 can of Hormel veggie chili
1 brick of vegan mozzarella
1 small can of minced black olives
1 small can of minced green chilis
Preheat the oven to 375. Get out a baking dish and smear the cream cheese [1 to 1.5 containers] on the bottom in an even layer, thick enough so you don't see the glass. Then, pour the can of chili into a food processor and pulse until the beans are chopped up. Pour that over the cream cheese and smooth it out. Next, grate the brick of vegan cheese and sprinkle all of it over the chili. And finally, sprinkle the green peppers and black olives over the top. Bake for about 30-45 minutes, or however long it takes for everything to get all melty and bubbly. Let it cool for about 10-15 minutes and serve it up with some bite-size taco chips!
