This was way too easy. And way too good. Here's how I did it.
1 big ol' hunk of homemade seitan
1 loaf of rye bread
1 jar of sauer kraut
1 brick vegan cheese
Thousand Island dressing (combine ketchup, sweet pickle relish, and vegan mayo and let it chill)
First, I cut the seitan into slices about 1/4 inch thick. Then I fried them in a pan with some garlic and whole pepper corns until they started to get brown. I set them aside and then dumped in a pile of the kraut and fried it for about 3 minutes, until it softened a bit, and set it aside. Then I put a couple teaspoons of vegan margarine in the pan and let it melt, set down a slice of rye bread in the melted butter, then layered on the seitan, kraut, cheese, and thousand island, and another slice of bread. I let that sit until the bread toasted, then carefully flipped it over so the other side could toast. The end result was amazing. I had 4 of them. I suggest you try it.
