Chile de Dioses

While looking through my stash for recipes containing cocoa powder, I came across my friend's amazing chili recipe. To give credit where due, this recipe was put together by the amazing Pax, who gave it the appropriately arrogant title, Chile de Dioses. There are quite a few ingredients, but it's very tasty.

1 pkg Soyrizo
3 cups mixed beans (pinto, black, kidney)
1 medium onion, chopped
6 cloves minced garlic
1 14 oz can, whole fire roasted tomatoes
1 4oz can tomato paste
1 ear of corn, cut from the cob
1 jalapeño, minced
1/2 bunch cilantro, chopped
1/4 cup bragg's liquid aminos
2 cups veggie stock
2 tsp paprika
2 tsp oregano
2 tbs cumin
2 tbs red chile (new mexico)
1 tsp red chili flakes
2 tbs olive oil

Sauté onion in olive oil until opaque. Add garlic and sauté for about a minute more. Add jalapeño, cumin, red chile flakes, bragg's aminos, veggie stock and soyrizo. Simmer a couple of minutes. Add corn, tomato paste and fire roasted tomatoes. Stir in remaining spices and simmer 10-15 minutes. When the chili is ready, stir in cilantro.

Eat and enjoy.

p.s. For better of worse, I tend to always add things the recipe doesn't call for. In this one, I'd probably through in some nutritional yeast.
