Japanese Spinach Rolls?

Can anyone help me figure out how to veganize this Japanese spinach roll recepie?

1 oz. spinach
Salt for seasoning
1/2 beaten egg
cooking oil

1) Blanch the spinach in salted water. PLunge in cold water and gently squeeze out the liquid. Stir salt into the egg and make a thin omlet with the cooking oil.

2) Place the omlet on a sushi mat. Put the spinach in the corner and roll tightly. Cut the roll into three peices.
