"Cheese" Sauce, "Cheese-y" Casserole

I made an awesome casserole today, and in the process, one of the best "cheese" sauces I've ever made! Even my cheese loving, vegetarian partner loved it.

"Cheese" Sauce

Mix all of these ingredients together:
1/2 cup flour
1/2 cup nutritional yeast flakes
1 tbsp. vegetable stock
1 tbsp. tumeric
1 tbsp. vegan parmesan cheese (I used Florentino Parmazano)

Then add:
2 cups water
1 tbsp soya sauce

and whisk it all together until it is well blended, with no lumps.

Heat the mixture on low heat, stirring very often until it begins to thicken and bubble.

Allow it to bubble approx. 45 seconds, and remove from heat.

Then, stir in:
1 tbsp mustard
1 tbsp margarine

"Cheese-y" Casserole

You will need:

"Cheese" Sauce *see above*
1 cup steamed broccoli
1 cup steamed cauliflower
2 cups basmati rice
Optional: 1/2 cup grated vegan cheese (I used Cheddar Style Cheezly)

Take the veggies, rice and sauce, and mix them all together, and put them in a 9" square casserole dish. Heat in the oven at
175 degrees Celsius for 10 minutes.

Optional: Sprinkle grated vegan cheese over casserole before serving.
