here's what i did
all dry ingredients were sifted into my mixing bowl:
3 cups unbleached white flour
1 3/4 unbleached granulated sugar
2 tsp baking soda
3/4 tsp salt
1 3/4 cups unsweetened vanilla soymilk
1/4 cup black currant liquer/cordial
2 tbl apple cider vinegar
1/3 cup og canola oil
1/4 cup og strawberry preserves (no seeds)
1 tbl strawberry extract
wilton pink food coloring paste, so it's pink!
350F for 45 minutes (i think my oven is not hot, so try 30)
i frosted it with:
1/2 cup EB buttery sticks
1/2 cup spectrum shortening
16 oz og unbleached powdered sugar
soymilk and black currant cordial
the strawberry top is made out of rolled out gumdrops.
i can't wait to try it!
