The measurments are approximate. We really just threw it together and this is us trying to remember about an hour later.
So first, we made up some short grain brown rice. It wound up being a lot since the bag broke, but you do need a lot for this, so it all worked out in the end.
Next, we carmelized some onions with garlic with olive oil. (1/3 a large onion, 3 cloves of garlic)
We then threw in some chili powder, cayenne pepper, paprika, cumin, salt and pepper.
In the meantime, we steamed some (a handful and a half) chopped baby carrots in the microwave so they would cook faster (3 minutes).
Then we added the carrots, a chopped yellow bell pepper and another chopped red bell peper.
After that cooked for a bit we added some cauliflower.
While that was happening, we opened and drained
1 can each, pinto beans, black beans, corn, garbonzo beans
and threw those in a pot with some more of the same seasonings as before and a can of diced tomatoes.
then we combined the veggie mixture with the bean mixture and cooked it in the pot over low heat until it was heated thoroughly.
Serve over rice, and ta-da!
Best food ever.
I'm really surprised at how good this turned out for just throwing stuff together.
